Sweet Feats - Pumpkin Bread with Cream Cheese Icing
Here is a great recipe for Fall! This is actually not one of my own, (I unfortunately cannot take full credit for it) but it was so good I just had to share it! My friend Traci gave me this wonderful recipe:
Pumpkin Bread
What you need:
Yellow or white cake mix (omitting water)
1/3 C of cinnamon applesauce
3 egg whites
1 C pumpkin
1 tsp cinnamon
What to do:
Preheat oven to 375 degrees and spray a cake pan with non-fat cooking spray.
Mix the cake mix, applesauce, egg whites, pumpkin, and cinnamon in a large bowl until moistened.
Beat with a mixer on medium speed for 2 min.
Smooth mixture into cake pan and bake for about 45 min. or until toothpick inserted in center is clean.
Let cool when finished.
Cream Cheese Icing
What you need:
4oz 1/3 less fat cream cheese
1/4 C softened light butter
1/2 tsp vanilla extract
1 C powdered sugar
Mix the cream cheese and butter in a mixer until creamy.
Stir in the vanilla.
Slowly stir in the powdered sugar.
Ice cooled bread and then chill.
Cut into 12 even pieces for a delicious 5 Weight Watchers points per slice.
